If you follow me on instagram you may have noticed these scrumptious pancakes…
I found the recipe at Nutty4Nutrition’s blog. And basically I’ve had them…. Friday, Saturday, Monday, and this morning. :D They’re that good!! And filling and healthy, and fit with me trying to get back on the Paleo eating plan.
So you ready for the super hard time consuming pain in the butt recipe?
Yeah- no. You think I’d make these 4 days in less than a week if they were?!

Banana Pancakes-
- 1 Banana
- 2 Eggs
- Cinnamon (optional)
- Place banana, eggs, and cinnamon in blender.
- Blend!
- Heat non-stick skillet, I use about 1/2 tbsp of coconut oil and melt it.
- Pour in batter, flip when the edges are starting to firm.
- Optional* Heat blueberries up in the microwave and smash them a little bit, then put a little in between each layer of pancakes.
You can really top with any fruit you’d like! I have also had a friend tell me to add a spoonful of almond butter to the blender!

So since I am trying to get back on track with healthy eating and exercising, my friend and I decided to start a fitness blog together! Its called Operation Definition.
We both needed something to keep us motivated to eat healthy and workout consistently. We started “working out together” a little over a month ago by doing the 30 Day Squat Challenge. We LOVED it! The results are amazing, and it was the first 30 day challenge I’ve ever finished! Since then, I have gone on vacation, gotten busy with my new job, yada yada, and needed more motivation!
So we decided to create another fitness challenge, I’ll post it here, but I’d love for you to check out the blog as well!
Want to take the challenge with us? If you’re worried about doing that many squats then I suggest starting with the 30 Day Squat Challenge, that is what we started with and were able to work our way up to where we are now.
