In the spirit of eating healthy this year, I am trying to add more protein into my diet. Protein gives you energy, supports your muscles, and you need it for your body to function properly. Make sure you are getting in protein at every meal. And if you’re trying to loose weight or get healthy, I recommend getting in quite a bit of protein. NO, it will not make you bulky. For women to get “bulky” it takes… like a lot. Like you have to be totally dedicated to your diet, never cheat, and take a lot of other supplements.
Protein will help your muscles grow which in turn burns calories! Want to lose weight, tone up, get fit? Start workin’ on your muscles ladies! Trust me, it will do wonders.
So here is a recipe I found on Pinterest. Nourish and Flourish came up with the original recipe, I just changed it a little.
Pumpkin Protein Bars
1 cup pumpkin puree
6 egg whites
2 t. vanilla
2 1/2 scoops of Designer Whey Protein Powder. (any protein powder will work- but your calories and protein count might be different than mine at the end.)
4 T. coconut flour
1 t. baking powder
2 t. cinnamon
1/2 t. nutmeg (I didn’t have any- and mine tasted just fine!)
1/4 t. ginger
1 t. powdered stevia
1. Mix wet ingredients (egg whites, pumpkin and vanilla); set aside.
2. In another bowl, combine dry ingredients. Whisk dry ingredients into wet ingredients. Mix with an electric mixer.
3. Pour mixture into a greased 8×8 baking dish. Bake at 350 degrees for 20-30 minutes.
Makes 9 squares.
Calories Per Serving: 68 | Protein Per Serving: 8.7

Hmmm, I’m not a pumpkin person. I wonder if I can sub that with something else?

Would love to try this… but…. does it have a STRONG pumpkin taste? I eat pumpkin pie, but that’s about as far as anything pumpkin I’ve tried.
